Trout With Asian Stirfry Vegetables


Trout with Asian style vegetables drizzled with coconut, chilli and lemongrass sauce.

  • 300g pack chilled John West Trout with Coconut, Chilli & Lemongrass Sauce
  • 100g rice noodles
  • 1 bunch broccolini
  • 1 small red capsicum, sliced
  • 50g snow peas
  • Lime cheeks, for serving


Step 1

Cook John West Trout following panfry pack directions. Remove from frypan, drizzle with coconut, chilli and lemongrass sauce and keep warm. Meanwhile cook rice noodles following packet directions

Step 2

Toss broccolini in the same frypan with a little bit of water for 3 minutes. Add capsicum and snow peas, toss for a further 2 minutes.

Step 3

Divide noodles between two serving plates. Top with vegetables and trout, drizzle over residual sauce and serve with lime cheeks.

Tasty Tip!

Bok choy, baby corn and green capsicum can also be stir fried to serve with the trout.
