Crispy Squid Roll With Cajun Mayo


A quick and fresh meal for family or casual entertaining.

  • ¼ cup light whole egg mayonnaise
  • 2 tablespoons light sour cream
  • Juice of ½ lime
  • 2 teaspoons Cajun seasoning (or to taste)
  • 280g packet John West Salt and Pepper Squid
  • 4 crusty long rolls, toasted
  • 1 head baby cos lettuce, finely sliced
  • ½ bunch fresh coriander to serve
  • Fresh lime wedges to serve


Step 1

To make the mayo, place first 4 ingredients into a small bowl and combine well.

Step 2

Prepare John West Salt and Pepper Squid as per packet instructions.

Step 3

To assemble the rolls, cut each roll lengthwise along the top, place the lettuce, coriander and cooked squid in rolls.

Step 4

Serve with mayo, extra coriander and lime wedges.

Tasty Tip!

Any leftover mayo can be stored in an airtight container in the fridge.
