John West Korean BBQ Tuna Bibimbap with spinach, mushrooms, pickled cucumber, carrot and bean shoots

- 125g tub microwavable ready to eat white rice
- 95g can John West Korean BBQ & Tuna, drained
- 2 button mushrooms, sliced
- 1 pickled cucumber, thinly sliced
- ½ cup baby spinach leaves
- ½ small carrot, grated
- ¼ cup bean shoots
- 1 fried or boiled egg (optional), for serving
Heat rice following packet directions.
Place rice into a serving bowl and arrange John West Tuna, mushrooms, pickled cucumber, spinach, carrot and bean shoots over rice. Top with egg and serve immediately.
For a bibimbap with a kick, add chilli paste or Sriracha sauce. Wilt spinach slightly by stirring through rice as soon as it’s cooked in STEP 1.
