Salmon Pasta Salad

A speedy and super tasty lunch for work or home.

Ingredients

  • 95g can John West Salmon Tempters – Olive Oil Blend, drained and oil reserved
  • ½ teaspoon red wine vinegar
  • 150g pouch Vetta Ready Pasta Classic Penne, cooked following packet directions and refrigerate to chill
  • 4 red and yellow cherry tomatoes, cut in quarters
  • ½ cup baby spinach leaves
  • 6 small pitted black olives
  • ¼ small red onion
  • 8-10 fresh basil leaves

Method

STEP 1
Make a dressing using reserved oil from John West Tuna and vinegar.
STEP 2
Combine remaining ingredients and drizzle with dressing. Serve immediately.
Tips
To make ahead, follow all steps but dress salad when ready to eat.
